Efficiency is everything for Scott Kimberly. An attorney in Middle Tennessee, he regularly works 60-plus hours a week. He also shares equal parenting time of his two children, who are five- and six-years-old. “I want to maximize time with my kids,” he says.
That very understandable desire has made him home in on recipes that come together quickly, like this recipe for dark chocolate pumpkin bites. The combination of cake mix, pumpkin, and dark chocolate chips, Kimberly says, is his “absolute favorite dad recipe.” Why? “You don’t have to measure a thing.”
The straightforwardness, he says, also makes it easy to get kids involved. “You can use a miniature ice cream scoop to pour them and, if your kids are the right age, you can either let them help or tell them that if they squeeze your wrist just right it will make the scoop work.” If you’re looking for a simple dessert that’ll please the kids? Scott Kimberly’s Dark Chocolate Pumpkin Bite Recipe
- 1 Can of pumpkin
- 1 Box of Yellow Cake Mix
- 1 Bag of Hershey’s Special Dark Chocolate Chips or similar product.
- Preheat oven to 350 degrees
- Put all ingredients in a mixer and mix until smooth.
- Pour batter into a mini muffin tin sprayed with butter.
- Bake for 15 minutes. Let cool and enjoy.
